This is one of my family’s favorites. My friend Pam published it in our church cookbook years ago. As with most of my cooking, I don’t measure the dry ingredients and it always turns out great. I prefer to cut back on the sugar because it is naturally very sweet.
This is this the recipe I recommend for carrots that are about to go bad in the refrigerator because it also freezes well.
Carrot Souffle
- 1 lb. cooked carrots
- 1 stick butter, melted
- 3 Tbsp. plain flour
- 1 tsp baking powder
- 1 tsp vanilla
- 1/4 – 1/2 cup sugar
Blend all ingredients together until smooth like pudding, pour onto greased casserole dish, bake 40-45 min @ 350. Makes 6-8 servings.

I’ve gotten some great feed back from people that attended my coupon classes and from readers on the meal plans. Thanks so much for your input and encouragement
Here is my basic meal plan for the week of 5/3 based on what I have on hand, the sales at Publix and coupon match ups. I’ve include ingredients that are on sale this week in parentheses incase you don’t have a stock pile going. Please leave a comment and let me know if you need any recipes. Breakfast
As I mentioned last week, we eat pretty much the same thing for breakfast each week and do something special on Saturday mornings. This weekend I’m making cinnamon raisin biscuit if raisins are included in the BOGO dried fruit sale.
- Cereal (General Mills, Kellogg’s)
- Oatmeal
- Yogurt and fresh fruit (Yoplait, Dannon Danimals)
- Granola (Back to Nature)
Lunch
- pimento cheese sandwiches (Publix chunk cheese)
- BBQ sandwiches, using left over BBQ from last week
- PBJs
- BLTs (Sunnyland Bacon, tomatoes on the vine)
- Fruit and chips (red grapes, blueberries, strawberries, cantaloupe)
Dinner
I’m looking forward to dinners this week as I have been craving Low Country Boil since seeing the corn on sale last week. Yum!
- Low Country Boil & Salad (shrimp, red potatoes, smoked sausage, corn) some of this was on sale last week
- Country Style Pork Chops, rice, fruit salad (pork chops, Uncle Ben’s rice, fruit)
- Pot Roast, green beans, carrot souffle (chuck roast)
- Quiche, green salad with strawberries and grapes (Publix shredded cheese, Sunnyland bacon)
- Enchiladas (I use the Old Elpaso Soft Taco kit as a starter)
- Chopped Steak Sandwiches, will use leftover roast (Publix cheese)

Today’s trip to Publix was quick, but for the most part I’m pleased with my savings. I was unable to print several coupons because my coupon printer has been quarantined by my malware software. Rather than taking time to fix it last night, I changed my plan. This is how it all worked out in the store today.
I spent $45.21 OOP plus tax. I saved $72.20…that’s $117.41 worth of groceries.
I had at least one coupon for each item listed except the items in italics-no coupons for those. I also had a $5/$30 and a $5/$50 and a few store/competitor coupons to stack with the manufacturer coupons. For those that can print coupons, there are several items that are worth stocking up on that aren’t on my list including Rice a Roni and Wish Bone Salad dressing. The price I paid per item is noted.

This is a great week for freebies at Walgreens if your store will print Register Rewards when you use coupons. My local store doesn’t and I don’t want to miss the deals. So, today I plan to call around and try to find a store that does print RR on purchases made with coupons. Check your mailbox for the Publix Feel the Clean promotional booklet. The aqua book is advertising the Publix spring cleaning sale April 22 – May 5. There are no manufacturer coupons in the book. It highlights cleaning products already on sale, but the last page has a $5 off $30 good during the sale week. It’s a great time to stock up on the buy one get one items mentioned below.
